Flank, New American Beefsteak Is Opening in Waltham

A new restaurant that celebrates the tradition of beefsteak banquets is going to be opening west of Boston, and a local radio person is behind the place.

An article in Boston Magazine and a post in BostInno both mention that Greg Hill (also known as "The Hillman") on WAAF is planning to open Flank, New American Beefsteak, at the upcoming 1265 Main development in Waltham, with the eatery apparently being a communal spot that offers less common cuts of meat such as flank, coulotte, hanger, and skirt. The articles mention that in addition to steak, the 8,000-square-foot dining spot will also offer New American fare, including braised beef wontons, deviled eggs, baked artichokes, and bacon-wrapped rack of lamb. Although Flank will have silverware, Greg Hill says that diners can feel free to "lose" the knife and fork and eat their meals like diners did at beefsteak banquets in the late 19th century. Expect to see Flank open later this year, according to the two articles.

[January 20, 2016 update: A job post on the bostonchefs.com site indicates that Flank will be opening in mid-February, with the listing stating that it will be a "world-class steakhouse with a nod to the past."]

Hill is also behind No. 29 Sudbury, an upscale Italian restaurant located on Hudson Road in Sudbury Town Square.
